The ingredients needed to make Vegetables  cutlets:
  1. Prepare 3 boil potatoes
  2. Get 1 Carrots
  3. Take 1 Capsicum
  4. Prepare 10 French beans
  5. Make ready 1 Beetroot
  6. Take as required Green peas
  7. Make ready 1 Onion
  8. Get 1 tsp Ginger
  9. Get 1 Chilli
  10. Make ready 1 tbsp Dry mango powder
  11. Prepare as per taste Salt
  12. Take 1/2 tsp black pepper powder
  13. Get 1 tsp roasted cumin powder
  14. Make ready 1/2 tsp red chilli powder
  15. Get As needed Soya paneer (tofu)
  16. Take As required Bread crumbs
  17. Get as required Fresh coriander

Mix all the ingredients to mashed potatoes, mixed vegetables, cilantro, green chilies, ginger, salt, and mango powder. Place the veg cutlet in the center. Cover it with shredded or grated cheese or a cheese slice. Top it with shredded veggies like cabbage, carrots, and lettuce or thinly sliced veggies like onion, tomatoes, cucumber.

Steps to make Vegetables  cutlets:
  1. Chope all the vegetables. Make ginger chilli paste. Boil potatoes.
  2. Instead of beetroot… you can use spinach.
  3. Now hot one pan add 2 tbsp oil. Add onion and fry for 1 min and then add all chopped vegetables. (no need to roast vegetables for long time…. only for 2 to 3 minutes)
  4. Now let it cool small and then add potatoes, panneer,all spices, chopped coriander and some breadcrumbs. (Don't use all bread crumbs, some we want use for rolling on cutlet)
  5. Now make cutlet…. as you like you can give a different shapes of cutlet.
  6. Now take some breadcrumbs in plate and roll cutlets on it.
  7. It is ready to fry. Fry in low flame and fry until is golden brown.
  8. Note. (you can make it frozen also) for more crispy you can add rice flour or rice flakes in vegetable mixture.

Cover it with shredded or grated cheese or a cheese slice. Top it with shredded veggies like cabbage, carrots, and lettuce or thinly sliced veggies like onion, tomatoes, cucumber. Cover with the other half of the bun and serve with tomato or mustard sauce.
